It’s 5:30 p.m. and you just got home from running errands, or picking the kids up from a play date, or a long day on the job. You might be tempted to get take-out, but are trying to save money. What do you cook so that you can have dinner on in short order?

I tend to make the same few things a lot. The quickest are tacos, spaghetti or chicken nuggets. You can make the breading with bisquick and then bake them and they are great!
Tomato soup and grilled cheese.
I make the same things a lot, too. Pasta is a staple around our house — spaghetti and homemade mac and cheese are favorites. The mac and cheese is made by simply adding a can of evaporated milk to 16-24 oz of cooked pasta, and then a couple of cups of shredded cheese — stir until creamy.
I’d be interested in the chicken nugget Bisquick recipe.
Here is one that was brought up in one of our RS Enrichment meetings… it’s called 3 Can Chili. You just combine a can of premade chili, a can of corn, and a can of diced tomatoes and heat through. You can vary the amounts as needed, and then top with some cheddar cheese if you like. Corn chips taste great on top, too! It’s super quick and easy, and you can make a lot if necessary.

Nachos! Or, chips and cheese for the picky eaters. Sometimes we’ll just have chilli (from a can), or tacos. Every once in a while, we have cold cereal. Yeah, I’m not very creative. 🙂 But these are for those rushed nights, right? Right.
This is kind of a glorified quesadilla, but we call it “Chili Cheese Pie”. You need:
* 1 – pie plate
* 2 – flour tortillas
* 1 – 16 oz. can of chili with beans
* Shredded cheese
* Sliced tomato (optional)
Take one flour tortilla and place it in a pie pan. Cover with 1/2 the chili, and sprinkle with cheese. Layer another flour tortilla, the rest of the canned chili, and again cover with cheese. Optional is adding some sliced tomatoes on top. Place in a 350 degree oven and bake until bubbly, about 20 to 30 minutes.
A tossed salad would be nice and you’re good to go.
